There are at least two food brands operating under the Birria Kings name: one in San Diego, California, and one in Arizona City, Arizona. We're the Arizona one. This article exists because we know the confusion happens, and because we think the differences between the two operations tell an interesting story about what birria can be.

First: Who Is Birria Kings San Diego?

Birria Kings SD launched in 2020 as a food truck in Chula Vista — started by two former nightclub marketers who spotted the birria wave early and moved fast. They grew to a brick-and-mortar location in San Diego and built a social media presence with tens of thousands of Instagram followers. They do volume, they do marketing, and they're a real business with real customers who love them.

Their menu leans into variety: birria pizza, birria ramen, quesatacos, vampiros, mulitas. They're not a small-batch operation. They're built for throughput, and they've made it work in a dense coastal city with strong foot traffic and a customer base that discovered birria through social media.

Who Is Birria Kings AZ?

We are a family-owned operation based in Arizona City, Pinal County — not a food-trend pivot, not a marketing play. We are a family that has been eating, cooking, and perfecting birria for years, and decided to build a real brand around it for the community we live in.

Our birria is Jalisco-style: slow-cooked beef marinated in guajillo and ancho chiles, tomatoes, garlic, and dried spices. The process takes hours — not minutes — and the consomé is made from the same broth that cooked the meat, which means the dipping broth actually tastes like something.

What the Desert Does Differently

San Diego's birria scene is shaped by its proximity to Tijuana — a border city that has its own regional birria tradition, often distinguished by the use of beef and a more tomato-forward broth. San Diego birria culture reflects that influence heavily.

Arizona's birria heritage comes from a different source. The families who settled Pinal County and the broader Arizona corridor brought primarily Jalisco and Michoacán traditions — slower-cooked, more chile-forward, with a deeper red color in the broth and a more pronounced dried-chile finish. When we say our birria is Jalisco-style, we don't mean it as a marketing term. We mean the recipe reflects where the family comes from.

The desert environment changes how you cook, too. Arizona's dry heat means you think differently about freshness and timing. Our hydroponic grow operation — fresh cilantro and herbs cut from our own indoor garden — exists because we understand that freshness matters more here, where produce from California trucks arrives already wilted from the journey.

The Portion Question

One pattern we noticed in reviews of the San Diego operation: repeated complaints about portions that have gotten smaller over time. "Tiny tacos," "barely any meat," "used to be full-size — not anymore." We heard that and we made a decision: generous portions are non-negotiable for us. San Diego's Birria Kings operates in a dense metro with millions of potential customers within a short drive. We operate in Pinal County — a region with 400,000 residents that has been almost entirely ignored by the dedicated birria market.

Nobody is doing what we're doing in Pinal County. There is no dedicated birria delivery operation serving Arizona City, Coolidge, Maricopa, and Casa Grande. Rili-B's Taco Shop has locations in Casa Grande and Maricopa and offers birria as part of a broader Mexican menu. Birria Copa operates a food truck in Maricopa with limited hours. That's it. That's the competition for 400,000+ residents who — based on national trends — have been eating more birria every year since 2020.

We're not competing with San Diego for San Diego customers. We're here for Arizona, and specifically for Pinal County, which nobody else has shown up for.
